El Chablis 1er Cru Mont de Milieu 2018 is a white wine. The nose is outstanding with hints of fresh fruit (citrus), stones, white flowers and beeswax. The palate is very meaty, medium-full bodied with fruity and chalky flavours. Mineral, fine and powerful character. Spicy and delicate. Remarkable and long finish.

About William Fèvre Chablis 1er Mont de Milieu

The Fèvre family had been running the Chablis vineyards in northwest France (in the Yonne department) for more than 250 years when William Fèvre brought out the first vintage in this domaine. It was 1959 and William was taking over from his father, the great winemaker who took on 7 hectares of vineyards after World War II. This was the starting point for Domaine Williams Fèvre, one of the largest producers in Chablis, which currently has 78 hectares divided into 90 plots, where William Fèvre Chablis 1er Mont de Milieu is produced.

William Fèvre Chablis 1er Mont de Milieu is a white made from Chardonnay, the undisputed queen of this denomination, grown in a vineyard in Mont de Milieu, a hill in the southeast of the region, which is crossed by a border separating Champagne county and the duchy of Burgundy. However, its fame is not so much down to this detail as it is to the specific climate conditions and orientation. These are what help create high quality wines: shelter from the north winds (thanks to the forests that act as a barrier), south-southeast exposure (which guarantees sun all day long and warm temperatures), great aeration and moderate and regular slopes. Finally, the clay and limestone soils are the perfect ingredients to make these wines with.

The quality is preserved in the winery, where they work by gravity, avoiding the use of machinery in the transport and production processes of the grape harvest (thus avoiding oxidation). Following a manual harvest, the William Fèvre Chablis 1er Mont de Milieu clusters are gently pressed for a very short time. Once the must has been made, and after a very light racking, William Fèvre Chablis 1er Mont de Milieu undergoes alcoholic and malolactic fermentation. After this, half of the cuvée will be aged in French oak barrels for 14 to 16 months (of which 5-6 months will be in contact with the lees), while the other half will remain in stainless steel tanks.
