About Villa Matilde Terre Cesare
Villa Matilde Terre Cesare is a young single-variety Aglianico rosé wine produced by the Villa Matilde Italian winery in Campania.
Villa Matilde is one of the wineries responsible for reviving “divine Falerno”, the cult wine of Imperial Rome. This wine was made with native varieties that stopped growing following the devastating phylloxera outbreak. Thanks to extensive work around the extinct Roccamonfina volcano, they have been able to revive production of wines from a glorious era. This is a whole new project that is being carried out with the best quality standards in mind.
The grapes used to make Villa Matilde Terre Cesare come from soils with sandstone clays and fossil deposits. These are old vines of an average age of 50 years old, planted at about 400 metres above sea level. Limiting the yield to 6,500 litres per hectare, they use traditional and environmentally friendly agriculture. The harvest is carried out manually at the optimum moment of ripeness.
After the Villa Matilde Terre Cesare grapes have been destemmed and pressed, they are cooled to 5°C to achieve maximum aromatic extraction. It then macerates with the skins and fermentation takes place in stainless steel at a controlled temperature.
