About Valdespino Ojo de Gallo
Valdespino Ojo de Gallo is a white wine produced by the winery Valdespino in Jerez de la Frontera, D.O.Jerez.
Valdespino is one of the oldest wineries in Jerez. The first member of the Valdespino family who started to cultivate the vines and age the Sherry wines was Mr Alfonso Valdespino, in the 13th century. Currently, Valdespino belongs to Grupo Estévez.
Valdespino is a reference of the ageing of Sherry wines, known for their traditional methods in the production processes of their wines.
All the grapes used to produce the Valdespino cru wines come from the farm Macharnudo Alto, located around 5 km from the north-east of Jerez, at 135 metres above sea level, planted on "albariza" soils, which are typical of the area. The "albariza" are white calcareous soils that retain the water very well.
Valdespino Ojo de Gallo is a wine made from Palomino Fino from the renown farm Pago Macharnudo Alto, with vines that are over 25 years old.
After the harvest, the must ferments in stainless steel deposits with indigenous yeasts. Following the fermentation, it remains in these deposits for 6 months with its fine lees.
Valdespino Ojo de Gallo is an elegant, unctuous and fresh wine. With honesty, this wine shows us the properties of the Palomino Fino and the "albariza" terroir.
