About Sarnin - Berrux Chablis

Within Burgundy, the wines of the AOC Chablis, white wines made only with the Chardonnay variety grown in the municipality of Chablis, in the northernmost part of Burgundy, deserve special attention. If we add to this well known quality the current scarcity of naturally made Chablis wines, Sarnin - Berrux Chablis is a real discovery. Its creators, Jean-Pascal Sarnin and Jean-Marie Berrux, are two champions of sustainable development and respect for the environment and, using grapes grown by certified organic and/or biodynamic winegrowers, they produce natural wines in a traditional and ancient way, but with the help of modern technology.

Sarnin - Berrux Chablis comes from 30-year-old Chardonnay vines planted in limestone and clay soil. The vines are cultivated using biodynamic agriculture and no chemical products. The harvest is carried out manually at the optimum point of ripeness. In the winery, the grapes are treated with the utmost respect, limiting handling and avoiding the use of external oenological products. They undergo a cold skin-contact maceration followed by spontaneous alcoholic fermentation with native yeasts in French oak foudres. Finally, the wine is aged in old 228 and 350-litre French oak barrels for 10 months.

Fresh and very mineral, Sarnin - Berrux Chablis is a crowd pleaser for good reason. This is a natural and unmasked Chablis designed especially for the great enthusiasts of northern Burgundy.

 

2017

Sarnin - Berrux Chablis 2017 is a white wine sculpted with aromas of white fruit, hints of citrus, and chalky undertones. On the palate, it is crisp, effervescent, and subtly saline. A wine featuring a pristine palate, incisive acidity, and a mineral depth.
