About Pizzolato Prosecco Spumante Brut
Settimo Pizzolato is the latest of five generations of this family to have made wine in northern Treviso, in Veneto (Italy). But if there is one thing that makes this winemaker stand out, it is his drive towards organic agriculture. Having owned 50 organic hectares since 1991, the same year the certification bodies were set up in Italy, he has made a leap quality when it comes to his wine production. And not just in the vineyard; in the winery he has launched a project to remodel the spaces and use new volumes in an eco-friendly way, emphasising the link between man and nature. So much so that he has become the best-selling Italian organic producer in the country.
Located in the cradle of prosecco, Cantina Pizzolato has a few of the most famous sparkling wines in Italy to share with us. Pizzolato Prosecco Spumante Brut comes from in vineyards located on the plains and slopes near the Piave river. These are Glera vines planted on stony and permeable soils that are cultivated using organic and environmentally friendly principles. In the winery the grapes go through two phases. The first involves a gentle pressing and fermentation of the must with native yeasts at a constant temperature of between 15-17°C (59-86°F). Then, in the second phase, a second fermentation (Charmat method) begins in pressurised steel tanks with a special mixture of sugar and yeast (liqueur de tirage) for a minimum of 30 days. It is then filtered, expedition liqueur (a mixture of base wine and sugar) is added and it is bottled.
