About Astrales Albariño
If you look up the word Astral in the dictionary, the RAE gives two meanings: 1) Adj. Belonging to or relating to the stars. 2) Adj. Used in El Salvador as a synonym for great (very good).
Apparently this word, which comes from the Latin astrālis, is used in the Central American country as a synonym for something wonderful, admirable and magnificent. It seems like the Los Astrales winery in Burgos were onto something when they gave their wines this name. And with good reason. The best example: Astrales Albariño.
Although Los Astrales still have their facilities in Anguix (Burgos), in the heart of the DO Ribera del Duero, the Astrales Albariño wine comes from the DO Rías Baixas, more specifically, from vineyards in the Salnés valley sub-region (in Pontevedra).
This area, which is considered the best in the denomination, is the one that is most exposed to the humidity of the Atlantic (with the resulting risk of fungal diseases like mildew). But the thick skin of the Albariño, which is harvested by hand, resists this well. The rest of the magic happens in the ground, which is deep and well drained.
Once the Astrales Albariño grapes reach the winery, they are destemmed and gently crushed to extract all possible aromas during the cold maceration process that happens before pressing. After crushing, Astrales Albariño is racked and fermentation begins. The wine then spends four months aging in tanks on its lees, with weekly batonnages and riddling to smooth it out.
