In Roman mythology “Liber pater” means Free Father and represents fertility, viticulture, wine and freedom. With this liberating concept in mind and keen to create great wines, sommelier Paul Marchand-Perarnau and winemaker Willy Roulendes have made AMI Bourgogne Liber Pater. A pure and attractive wine that they make in the winery they set up in 2014 in the Maranges valley, in the south of the Côte de Beaune, with the aim of keeping their friendship going for years to come. And they are doing very well, because Willy’s experience of the Cote de Beaune terroir and Paul’s charisma to meet the needs of a demanding urban audience, has allowed them to produce intense, powerful and totally pure Burgundies.
Their AMI Bourgogne Liber Pater wine is made from Pinot Noir vineyards planted on deep calcareous clay soils. The vines are cultivated using organic agriculture with organic treatments and biodynamic practices. Once the grapes have reached their optimum ripeness, they are harvested by hand and the fruit is selected on the vine. Then, in the winery, the wine is made from whole grape bunches with a 10-day maceration and spontaneous fermentation with native yeasts. The wine is then aged in barrels for 12 months and finally bottled without clarifying, filtering or adding sulfites.
As a result they have created AMI Bourgogne Liber Pater, a freedom song that confirms the friendship between Paul and Willy (AMI means friend in French). A very fragrant Pinot Noir full of minerality.
